This illustration, signed Lotza, from Espelette, in the Basque Country, shows the drying of its chilli pepper which generally takes place from August until the end of November. During this period, the facades of the half-timbered houses of Espelette, in the Basque Country, are covered with garlands of Espelette chilli pepper. Nowadays, it is only a matter of garlands, one could say; whereas traditionally the producers dried the Espelette chilli pepper on the facades exposed to the south. Did you know that the appellation Piment d’Espelette PDO applies only to the dried chilli pepper because this stage concentrates its flavour?
