Chocolatine or Pain au Chocolat ? Eternal debate which surely ends here with this original work signed Lotza. A baker and historian from Toulouse has decided: “I have regularly researched everything to do with bread. The baguette was brought to France by a certain Zang August, in the middle of the 19th century. He also brought the croissant, which commemorates an Austrian victory over the Turks in 1683. A chocolate version, ‘Schokoladeen croissant’, was also sold. And the chocolatine in all this? “Between the Austrian accent, which pronounces the ‘d’s’ as ‘t’s’, and our own, the Parisians called the Viennese pastry ‘chocolatine’.” Â Also, the Chocolatine is not made with bread dough, but with puff pastry.
